Oatmeal Coconut Cookies / Gluten free cookies
Gluten free butter free cookies, eat as many cookies you want.These cookies are loaded with
oats, toasted coconuts give them nice flavor and aroma.If you are looking for crispy cookies avoid food processor and bake for approximately 20 minutes.
Ingredients
- 1 1/2 cups old fashioned oats
- 1/2 tsp baking powder
- 3 tbs molasses
- 1/2 cup toasted coconut flakes
- 1/8 tsp salt
- 1 tbs vegetable oil or coconut oil
- 2 tbs water
Directions
Preheat oven to 375 degrees F. Combine all the ingredients except water. Give a quick pulse in food
processor adding water or use your hands and make a dough out of it. Make small round balls, flatten slightly and place it on baking sheet with
parchment paper. Bake for about 15 minutes for chewy cookies else bake 5 more minutes for crispy cookies.
