Skillet Baked Sweet Potatoes and Zucchini
This is my 2nd post on homemade baby foods. I think almost all babies love sweet potatoes. Don't be surprised when you see paprika in baby food recipe. My baby won't eat, if I bake them plain. She want all the flavors in it.You can bake them plain or add the listed ingredients in very small amounts.
Ingredients
- 1 cup sweet potatoes, cut into cubes
- 1/2 cup zucchini , cut into cubes
- 1/2 tsp smoked paprika
- salt, a pinch
- 1 tsp olive oil
- turmeric, a pinch
Directions
Preheat oven to 400 degrees F. Add all the listed ingredients in a heavy cast iron skillet.Toss to coat the spices
and oil well. Bake for 15 minutes on a lower rack of the oven. Move to upper rack and bake an additional 10 minutes. Mash them with back of the spoon and feed your baby healthy and delicious homemade meal or mix in baby cereal.
