Blueberry cornbread muffins
Ingredients
- 1 cup all purpose flour
- 1 cup cornmeal
- 1/2 cup white sugar
- 3 tsp baking powder
- 1/4 tsp salt
- 1 egg
- 1 cup milk
- 1/4 cup vegetable oil
- 1 cup fresh blueberries
Directions
Preheat oven to 400 degrees F. Mix egg, milk, and vegetable oil, set aside. In a large bowl combine flour,
cornmeal, salt, sugar and baking powder. Stir in blueberries. Fold the wet ingredients into dry ingredients and stir only until the ingredients are combined . Do not over mix. Evenly fill the muffin cups with batter I use ice cream scoop to do this job. Bake for about 15 to 20 minutes or until a tooth pick inserted into the center of muffins comes out clean.

ReplyDeleteBeen a while since i saw some gorgeous pictures of yours. Fab idea to use up cornmeal. I only wish we get fresh blueberries here
