Celebrate Cherry season with this buttery cake using fresh cherries
Cherry Cake \ Cherry Desserts
Ingredients
- 1/2 cup ( 1 stick) unsalted butter, melted
- 3/4 pound fresh sweet cherries
- 1 cup all purpose flour
- 1/2 cup almond meal
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 2 eggs
- 3/4 cup sugar
- 1 tsp pure vanilla extract
- 1/4 tsp almond extract(optional)
- 1/3 cup milk
Directions
Preheat oven to 400 degrees F. Rinse dry and pit all the cherries. Take about 10 cherries, cut them
in half , then place them on a sheet of paper towel, cut side down. Chop the remaining cherries, set aside. In a separate bowl whisk together flour, almond meal, baking powder and salt. Beat eggs and sugar until thick and creamy. Beat in vanilla extract.Fold in cooled butter and milk until incorporated. Now fold in the flour mixture just until moistened. gently fold in the chopped cherries. pour the batter into the prepared pan, bake for 15 minutes ,then remove from the oven. Quickly arrange the halved cherries, cut side down on top of the cake. Return the cake to the oven and bake for 15 to 20 minutes more or or until golden brown. Serve warm or at room temperature with a dollop of whipped cream or ice cream.

ReplyDeleteIs there by substitute for almond meal? The cake looks yummy and I don't want to miss this joy of baking of a cherry cake :)
This looks delicious and the perfect dessert for a lunch party. I see that in the recipe it allows for an optional almond extract ingredient. Have you tried the recipe with or without the almond extract? I am wondering if it makes the cake taste different. Thanks for posting the recipe.
