Whole wheat moist carrot cake
Ingredients
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1/2 cup canola oil
- 2 eggs
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 cup Bob's Red Mill Whole wheat pastry flour
- 1 cup grated carrots
- 1/4 cup raisins or chopped nuts
- 3/4 tsp baking soda
- 1 tsp baking powder
Directions
Preheat oven to 350 degrees F. In a large bowl mix together sugars, oil, beaten eggs, salt and cinnamon. In another bowl combine flour, grated carrots, raisins, soda and baking powder. Add this to the egg mixture and mix well. Pour this into a greased 8"* 8" pan and bake for about 35 to 40 minutes or until a tooth pick inserted into the center of the cake comes out clean.

ReplyDeleteI can't believe this recipe doesn't have more reviews. It really is fabulous, and the recipe is perfect just as it is--don't change a thing! I've made this dozens of times now and passed the recipe on to my family. It's now the only recipe we use for carrot cake and carrot muffins.
