Upma with leftover Idiyappam - A quick and delicious tea time snack .
Ingredients
- 5 to 7 idiyappam
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1 tbs roasted peanuts
- few slightly roasted cashews
- curry leaves, few
- salt as needed
- asafoetida, a pinch
- 1 small onion
- 2 tsp freshly squeezed lemon juice
- 1/2 tsp chicken masala or egg masala
- 1/2 tsp turmeric powder
- 2 dry red chillis
- 1 tbs vegetable oil
- few coriander leaves
Directions
Separate the idiyappam with clean hands, set aside. Heat oil in skillet or wide pan. Splutter mustard seeds and cumin seeds. Add red chillies, curry leaves and onions. Saute till onions get translucent. Add turmeric powder, masala, salt , roasted peanuts and cashews. Add separated idiyappam, mix well. Finally sprinkle lemon juice over the upma. Garnish with fresh coriander leaves.
