Banana Flower Stir Fry With Black Chickpeas
Have you ever paired banana flower with black Channa, if not try this. This is how my Mother in law makes koombu thoran . Easy to make if you have some leftover cooked black Channa. Banana flower is packed with dietary fibers, proteins, unsaturated fatty acids and rich in vitamin E.
Ingredients
- 1 1/2 cups banana flower, chopped finely
- 1/2 cups cooked black chick peas
- 1 onion, finely chopped
- 1 tsp grated garlic
- 1-2 slit green chillies
- 1 tsp par boiled rice
- 2 tbs grated coconuts
- 1/2 tsp turmeric powder
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- curry leaves
- 2 tsp vegetable oil
Direction
Wash the banana flowers adding a pinch of turmeric powder in water and drain well . Add turmeric powder,onions, garlic, salt,green chilies,coconuts and curry leaves,Cooked chick peas, mix everything together and keep aside. Heat oil in a pan, splutter mustard seeds, cumin seeds and rice. Now add banana flower mixture,mix well and bring the mixture to the center and cook on low heat covered till done. serve with rice.
