Omapodi \ How to make Plain Sev at home
Ingredients
- 1 cup besan flour(chickpea flour)
- 1/4 cup rice flour
- 2 tsp omam (ajwain seeds)
- 1 tsp butter
- salt, as needed
- 1 tsp hing powder
- few curry leaves, chopped
- water asneeded
- 2 tsp oil
Direction
Dry roast omam, powder it and soak in water for 10 to 15 minutes. Combine besan, rice flour, salt and hing
powder, set aside. Filter the ajwain and reserve the water . Knead into a sticky dough adding butter, oil and filtered water with hand. Heat oil in a pan. Take a small portion of the dough and keep inside the Idiyappam press (use the small dotted pores ) , press it down straight into the hot oil in circles. Fry till golden crispy. Drain on tissue paper. Break into pieces and keep it in air tight containers. Deep fry curry leaves in hot oil , chop into small pieces and sprinkle on sev. Munch it any time.
