Black bean stir fry with grated coconut and cheddar cheese
Ingredients
- 2 cups black beans, I used canned beans
- 1 onion, chopped
- 1/2 tsp cumin seeds
- 2 to 4 garlic cloves,crushed
- few curry leaves
- 1 tbs olive oil or any vegetable oil
- 1 tsp pepper powder
- 1/2 cup grated coconut
- 2 tbs grated cheddar cheese
Directions
Wash the canned beans several times to eliminate the excess sodium content, set aside. Heat 1 tbs olive oil in a pan, splutter cumin seeds and curry leaves. Add chopped onions, saute for few minutes. Add crushed garlic and pepper powder. Stir in cooked beans( if you are using dry beans, soak them for 5 to 8 hours and pressure cook) and grated coconut , mix well and cook covered for 3 minutes. Sprinkle grated cheddar cheese, close the lid, simmer for few more minuted till the cheese gets melted. Turn off the heat .Serve as a side dish with rice or use as stuffing.

ReplyDeleteThe photos look simply amazing, I love the beautiful backgropund. As I write this, I have a pot of black beans ready to be cooked ( Iused dried beans, soaked overnight and boiled)- so might give this delicious dish a go!
