Undan Pori -Kerala Tea time snack
Its a popular snack among Kerala tea shops. I was searching for the right recipe. Had seen one in Lakshmi Nair's magic oven cook book, but she called it as Banana cake.Recently i saw them on
Suja's blog, the recipe looked good. It came out perfect but i think Palayam kodan will make much difference. Check out the original recipe

Ingredients
- 1 1/3 cup wheat flour
- 1/3 cup rice flour
- baking soda , pinch
- 3/4 cup jaggery
- 3 small bananas, mashed (use Palayamkodan variety if available)
- 1/3 tsp cardamom powder
- 1 tbs ghee\ clarified butter
- 1/3 cup coconut chunks
- salt, as needed
- oil ,to fry
Directions
Melt jaggery by boiling with little bit of water to a thick syrup and allow to cool. Heat ghee in a pan and roast coconut pieces till golden brown. Mix the mashed bananas with jaggery syrup. In another bowl mix all the dry ingredients and add banana mixture and fried coconuts to make a smooth dough. Make round balls out of this dough and deep fry till golden brown. Serve with hot tea...

ReplyDeleteAwesome clicks.yes Lakshmi Nair as well got undan pori recipe which calls but for sugar instead of jaggery.I tried that one with half mind.But didn't come out well.

I once wrote about its prepration in my blog. The recipe was from the chef in the "tattu kada" from where I used to have my breakfast.
We tried it few weeks ago at my Aunt's residence.
My apologies for not visiting your blog for a long time. It is a hard time for me to start pushing apologies to my blogging friends.
