Basic Corn Muffins
Corn muffins are great breakfast muffins. This recipe is slightly different from the one i posted earlier.I love anything made out of cornmeal, simply love the less sugary gritty texture of these muffins.Make sure all the ingredients are at room temperature.
Ingredients
- 1 1/4 cup cornmeal
- 3/4 cup all-purpose flour
- 2 1/2 tsp baking powder
- 2 tbs sugar
- 1/2 tsp salt
- 1 large egg,beaten
- 3 tbs vegetable oil
- 1 cup milk
Directions
Pre-heat oven to 400 degree F.In a large bowl whisk together the dry ingredients.To this add beaten egg, oil and milk. Combine with a few rapid strokes. Scoop the batter into muffin pan and bake for about 12 to 15 minutes. Serve hot with a cup of coffee or tea.
Never tried corn muffins..they look delicious.
