Ingredients
- 1 pineapple
- 2 tbs vegetable oil
- 1 onion, chopped
- 2 green chillies, chopped in rounds
- 1/2 cup chicken, cut into small dice
- 6 to 8 cooked prawns
- 3 cups cooked cold jasmine rice
- 2 oz roasted cashew nuts
- 2 spring onions chopped
- 1 tbs fish sauce
- 1 tbs soy sauce
- Thai basil leaves, few
- mint leaves, few
- 2 red chillies sliced, to garnish
- 1 green chilli, sliced to garnish
Directions
Cut the pineapple in half and remove the flesh by cutting round inside the skin. Reserve the skin shell for
serving. Heat oil in a wok or large frying pan. Add the onion and chillies and fry for about 5 minutes until softened. Add the chicken pieces and cook until its brown on all sides. Stir in the prawns and rice, toss well and stir fry until the rice is thoroughly heated. Add the chopped pineapples, spring onions, Thai basil leaves and cashew nuts. Season with fish sauce and soy sauce. Serve the rice in pineapple skin shell.Garnish with fresh mint leaves, red and green chillies.

ReplyDeleteI have never had pineapple in fried rice, but it definitely is something I do need to try. A sweet flavor would go well against the soy flavor. Also, the presentation looks fit for a king. Well done-yum!
