Singapore Rice noodles
An easy breakfast made with ready made rice noodles.
Ingredients
- 1 bag thin rice noodles(1/3 of the bag will be enough for 2-3 people)
- 1 small onion
- salt as required
- 1 tsp of meat masala(combination of turmeric, red chilli, coriander, cloves, cinnamon powder etc)
- Coriander leaves to garnish
- 1 tbsp vegetable oil
Directions
Break the rice noodles into about 2 inch long sets. Boil 4 cups of water and add enough salt. Add 1/3 of the
rice noodles and bring to boil. Continue heating for 2 minutes and drain the water and cool down. Heat oil in a wok and add the sliced onions.Add the meat masala and cook the onion on a medium heat until soft. Add the cooked noodles and mix well together. And cook on high for 1-2 minutes. Serve with egg.
Notes:
You can boil the rice noodles ahead of time and and keep refrigerated. And assemble everything together later. Add vegetables of your choice.
