Laddu/Boondi Laddu
When I crave for something sweet, Laddu is the first thing comes up. What is better than enjoying a homemade Laddu for Diwali
Ingredients
- 1 cup Besan/Chickpea flour
- 1.5 cup sugar
- 1/4 cup raisins and cashews together
- 3-4 cardamom pods, crushed
- Oil for frying
Directions
Mix the Chickpea flour with 2/3 water to form a smooth batter. Test the batter by pouring
through a strainer to see if boondi's(about lemon seed sized balls) are coming out of the bottom.
Adjust the water/flour accordingly.
Heat the sugar with 3/4 cup of water. Bring to a boil and continue boiling for 2-3 minutes. If you
have candy thermometer, the temperature is expected to be around 225 degree F. Keep it warm aside.
Heat the oil around 350 degree F and start frying the boondis, transfer the boondi to the sugar syrup.
Add raisins, cashews and cardamom to the boondi mix and wait for the mixture to cool down about 10 minutes. Form into small balls by hand. This will make about 12 Laddus.
