Kerala Style Wheat Halwa















Kerala  Wheat  Halwa / Kozhikodan Rubber Halwa
Ingredients 


Directions
  This is our favorite rubbery version of Halwa. Mix the wheat flour with four cups of water to form a thin
batter. Strain it to remove any clumps. In a thick bottomed vessel, heat the sugar to slightly caramelize it. Add hot water to form a thick syrup. While the syrup boils add the flour batter and stir continuously. When the halwa thickens add 1/2 cup of oil and continue stirring. Add the crushed cardamom pods and continue stirring until the halwa separates  from the vessel. Add more oil if required. Add cashew/ raisin /dry coconut and mix well and transfer the halwa to greased plate and allow to cool and settle. Cut into pieces after cooling down and enjoy!

    lovery recipe and photo. can u pls elabarate the process of sugar syrup. you have not mentioned how much to caramalise and how much hot water to ab added later. Plsss reply i need to prepare this.

    Sugar is caramalized to get a better color for the Halwa. Only partial caramalization is required. Otherwise taste will be different.
    Add water when about half the sugar turns color and rest is still white. You will need about 1/2 cup of water, we are looking for a thick syrup here.
