Mathan Pachadi / Pumpkin Pachadi
Ingredients
- 1 cup pumpkins, chopped( any variety)
- 1/2 tsp turmeric powder
- 1/2 to 3/4 cup beaten yogurt
- salt as needed
- 2 green chillies
To Grind
- 1/2 to 3/4 cup grated coconuts
- 2 green chillies
- 1/2 tsp mustard seeds
- 2 garlics,chopped
To Garnish
- curry leaves, few
- 1/2 tsp mustard seds
- 1 tbs grated coconuts
- 1 dry red chilli
Directions
Cook pumpkins with water turmeric , green chiliies and salt, mash well and keep aside.To this add ground coconut paste. Add beaten yogurt and mix well. Adjust salt. Heat 2 tsp coconut oil in a pan ,splutter mustard seeds .Add all other seasoning ingredients and pour over pumpkin pachadi. Serve with rice as a side dish.
