Yogurt and Spice Muffins
Ingredients
- 1 cup all purpose flour
- 1 cup whole wheat pastry flour
- 1 tbs baking powder
- 1/2 tsp baking soda
- 4 tsp apple pie spice
- 1/2 cup sugar
- 2 eggs
- 1 cup low -fat vanilla yogurt
- 6 tbs vegetable oil
Directions
Preheat oven to 400 degrees F. In a large bowl sift together flours, baking powder, baking soda and
apple pie spice, stir in sugar. Beat the eggs lightly , then beat in the yogurt and oil. Make a well in the center of the dry ingredients and pour in the beaten liquid ingredients. Stir gently until just combined, do not overmix. Pour the batter into muffin pan and bake for 20 minutes or until golden brown and firm to the touch.
