Pal Payasam(Rice Pudding)
Pal payasam is our favorite dessert for all occasions and especially for
Onam.
Happy Onam to all.
Ingredients
- 1/2 Cup Basmati rice (or any raw rice)
- 4 cups of Milk
- 1 cup of sugar
- few Cahsews and raisins
- 1 tbsp Ghee"(Clarified butter)
- few drops of rose water or few strands of saffron(optional)
Directions
Cook the rice with 2 cups of water until very soft (ready to break). Add milk and sugar and bring to boil.
Make sure to stir in between to prevent from sticking to the bottom. Continue cooking for about 10 minutes at a low heat until the payasam thickens and rice starts floating rather than lying on the bottom. Remove from heat and add crushed
cardamom and few drops of rose water(This gives a wonderful flavor to the payasam, It is available with different concentration, be careful here as it can overpower the payasam easily, if added in excess).
Heat the
ghee in a pan and add the cashews, when the cashews turns color add the raisins and pour everything to the payasam. Serve hot(with ice-cream!) or cold.
Awesome! So is this is a week long onam celebration. Everything looks great!
