Peanut Fritters
These Indonesian Fritters are easy and quick to prepare, adapted from the cook book" Around the World in 450 Recipes".
Ingredients
- 2 oz rice flour
- 1/2 tsp baking powder
- 1 garlic clove crushed
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 tsp turmeric powder
- 2 oz peanuts, lightly crushed
- water, as needed
- salt ,as needed
- coriander leaves to garnish
Directions
Put the rice flour, salt and baking powder into a bowl .Add the garlic , coriander, cumin, turmeric and
peanuts. Gradually stir in the water to make a smooth paste. Spoon the batter into the hot oil and deep fry till crisp and brown. Drain on the kitchen paper and garnish with coriander leaves.
