Thai Inspired dried anchovies curry
Ingredients
- 1 Cup Dried anchovies(Netholi)
- 1 Tomato sliced
- 1 medium Onion sliced
- 1 tbsp Red chilli powder
- 1 tbsp chopped ginger
- 1 tsp turmeric powder
- Oil as required
- Salt as required
- A few Curry Leaves
- 1/2 cup fresh Coconut
- 1 tbsp of yogurt
- 1/4 cup coconut milk
Directions
Heat 1 tbsp of oil in a pan to a medium hot and the red chilli powder and turmeric powder, mix this with the oil over low heat to bring out the aroma. Add 1 tbsp of coconut milk and mix together to form a paste. Continue to cook this at low heat for 2 more minutes. Add the ginger, tomato and onion continue cooking
at medium heat until the onion is soft.
Heat 2 tbsp of oil in a pan and fry the dried anchovies until light brown (Try bending the anchovies and it should split). Grind the fresh coconut with 1/2 cup of water and the yogurt and 4-5 fried anchovies. Add this to the pan and continue cooking for 5 minutes. Add fried anchovies and curry leaves, cook for 2-3 minutes and the curry is ready to serve.

I wont show it to my wife..she will remember the great dried Anchovie dishes I cooked for her in Korea or KUala Lupur..
