Rajma Rice / Rice with Kidney beans
A great way to use leftover rice. This Rajma rice is full of great flavors, can be eaten without any side dish.
Ingredients
- 2 to 4 cups cooked basmati rice or Jasmine Rice
- 1/2 to 1 cup cooked rajma(kidney beans)
- 2 garlic pods
- 1 tbs ginger chopped
- 1/4 cup mint leaves
- 1/4 cup corinder leaves/ cilantro
- 2 green chillies
- 3 shallots, chopped
- 1/2 cup chopped onions
- 1/2 cup chopped tomatoes
- 1 tsp garam masala
- 1/2 tsp cumin powder
- 1/2 tsp chilli powder
- 1 /2 tsp cumin seeds
- 1 tbs ghee / clarified butter
Directions
Crush garlics, ginger, cilantro, mint leaves, and shallots, keep aside. Heat ghee in a pan and splutter cumin seeds. Add onions ,saute till slightly golden in color. To this add crushed mixture, followed by cumin powder, garam masala, and chilli powder. Saute till raw smell goes. Add chopped tomatoes and fry for 2 to 5 minutes. Adjust salt if needed. Now add cooked rajma and cooked rice, mix everything (taking care not to mash rajma pieces) till coated well with masala mixture. Remove from flame and garnish with fresh coriander and mint leaves.
Great idea to use Rajma gravy with rice, looks delicious.
