Lemon Yogurt Pound Cake / Very Moist Lemon Cake
Ingredients
- 3/4 cup all purpose flour
- 1/2 cup unsalted butter, at room temperature
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup sugar
- 1 tbs fresh lemon zest
- 2 tbs lemon juice
- 2 eggs
- 1 tsp vanilla extract
- 2 tbs plain yogurt
Directions
Preheat oven to 350 degrees F. Sift the flour, baking powder and salt, keep aside. Cream sugar and butter until light and fluffy. Add lemon zest, vanilla and eggs, one at a time beating well after each addition. Add flour mixture alternating with yogurt, beat until the batter is smooth.
Bake in a loaf pan for 40 to 45 minutes or until a tooth pick inserted into the center of the cake comes out clean.
To Make Lemon Glaze
In a small bowl stir together 1/4 cup sugar and 2 tbs lemon juice until the sugar is dissolved. Spread the glaze all over the top and sides of the cake, until the entire glaze is used up. Sprinkle
powdered sugar on top and enjoy.
