Koorka Thoran / Chinese Potato Stir Fry





Stir fried Chinese potatoes with shallots, garlic, red chillies and coconut

Ingredients

  • 2 cups chopped Chinese potato(Koorka), frozen or fresh
  • 5 to 10 shallots
  • 2 red dry chillies
  • 2 to 4 garlics, chopped
  • 1/4 cup grated fresh coconuts
  • salt,as needed
  • 1/2 tsp turmeric powder
  • 1/2 tsp urad dal


Directions

   Crush shallots, garlics and red chillies and keep aside.Cut and peel the Chinese potatoes and wash several times in water. Cook covered in a vessel adding salt, turmeric powder and water. Once cooked remove from the fire and drain the water. Heat 1 tbs coconut oil in a pan, splutter mustard seeds, cumin seeds, curry leaves and urad daal. To this add crushed garlics chilli paste. Saute till the raw smell goes. Add cooked koorkas and coconuts . Mix everything well. Cook covered for few more minutes on law flame. Pour 1 tsp coconut oil on top and serve as aside dish with rice.

  2. We call this siru kizhangu in Tamil..It wiil be available in Tamil nadu only during January/Pongal season..Cleaning part is tedious,but I love the stir fry..Urs look delish..Iam craving for it now..Made me nostalgic:)
