Pumpkin Curry / Mathanga Pulinkari
Ingredients
- 1cup Pumpkins, chopped
- 1 tsp chilli powder
- 1/2 tsp turmeric powder
- 2 to 3 tsp tamarind extract
- salt, as needed
To Grind
- 1/2 cup coconuts, grated
- 1 tsp urad dal
- 1 tsp coriander seeds
- 1/4 tsp methi seeds
To Garnish
- 1/2 tsp cumin seeds
- few curry leaves
- 2 dry red chillies
- hing powder, a pinch
- 2 to 3 shallots
- 1 tsp mustard seeds
Directions
Roast the coconuts with methi seeds, coriander seeds, shallots and urad daal, till slightly golden in color. Set aside to cool and grind to a coarse paste. Cook pumpkins with turmeric powder, chilli powder and salt. To this add ground coconut paste and tamarind extract. Cook on low flame for few more minutes till gravy thickens.Tamper with curry leaves, mustard seeds,cumin seeds, hing powder and red chillies and shallots.
