Cornmeal pancakes
Ingredients
- 1/2 cup corn meal
- 1/2 cup all purpose flour
- 1 1/2 tsp baking powder
- 2 tsp sugar
- 1/2 tsp salt
- 1 large egg
- 3/4 cup buttermilk
- 1/4 cup vegetable oil
Directions
Combine flour, corn meal ,baking powder,sugar and salt. In another bowl beat egg, butter milk and oil until blended. Add this liquid mixture to the dry ingredients, and mix until lumps are eliminated. Drop this batter on a hot griddle. Cook for 2 to 3 minutes until slightly brown. Serve with maple syrup and fresh fruits.

Interesting.Do corm meal need to be soaked for some time ?Usually its very hard right?
