1/2 cup red bell pepper, chopped in 1/2 inch cubes
2 tomatoes
1 tsp cumin seeds
1 green chilli
1/2 tsp cumin powder
1 tbs coriander powder
1 tsp grated ginger
1/2 tsp kashmiri chilli powder
1/2 tsp turmeric powder
asafoetida(hing), a pinch
1 tbs powdered dry fenugreek leaves
Directions Grind tomatoes with ginger and green chilli and set aside.Heat 1 tbs oil in a pan and stir fry bell peppers till tender and keep aside. To the same oil add cumin seeds and hing powder. Once cumin seeds starts to splutter add tomato mixture, turmeric powder powdered fenugreek leaves, coriander powder, cumin powder and chilli powder. Cook tomato mixture till oil separates out of it and reduced to half in volume. Add water, if it is too thick and adjust the salt. To this add bell pepper and paneer cubes, simmer it for few more minutes on low heat. Garnish with grated paneer and coriander leaves. Serve with Naan, roti, poori, rice etc.
