Kerala Special Plum Cake / X'mas Special Rum Cake / Rich Fruit Cake
Ingredients
- 3/4 cup all purpose flour
- 1/2 tsp baking powder
- 1 stick butter
- 3/4 cup sugar
- 2 eggs
- 1/2 cup gold rum
- 1/4 cup raisins
- 1/4 cup cashew nuts
- 1/4 cup pecan or walnuts
- 1/4 cup dates, chopped
- 1/4 cup candied fruits
- 1 tsp caraway seeds
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ginger powder
- 1/4 tsp cloves powder
- 1/4 tsp salt
- 1 tsp pure vanilla extract
- 1/4 cup caramel syrup
Directions
Soak the dry fruits in 2-3 tbsp of rum and keep this at room temperature overnight or this
can be made many days ahead. Make the caramel syrup also ahead of time.
Preheat oven to 350 degrees F. Sift the flour, baking powder, salt, and all the spices
several times and keep aside. Mix butter and sugar till creamy. Add eggs
one at a time, beating well after each addition. Pour in the caramel syrup and vanilla
extract and mix well. Add the flour spice mixture and fold in with a wooden spoon.
After mixing well add the chopped nuts and candied fruits and mix again. Bake for
45 to 50 minutes or until a tooth pick inserted into the center of he cake comes out clean.
Once cake is cooled, make small pores on cake with tooth pick and pour 1to 2 tbs Rum
and let it soak. Cover the cake with wax paper and keep it 4 to 5 days or more for a better
taste.
