Carrot Cake With Maple Butter Frosting
Ingredients
- 4 cups carrots ,grated
- 1 1/2 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 2 tsp ground cinnamon
- 4 eggs
- 2 tsp vanilla extract
- 1 cup dark brown sugar
- 1/2 cup sugar
- 1 1/4 cups vegetable oil
- 1 cup pecans or walnuts,finely chopped
- 1/2 cup raisins
For the frosting
- 6 tbs unsalted butter,at room temperature
- 3 cups confectioner's sugar
- 1/4 cup maple syrup
Directions
Preheat the oven to 350 degrees F. Grate the carrots and set aside. Sift the flour, baking soda, baking powder, salt and cinnamon powder into a bowl, set aside. With an electric mixer beat the eggs until blended. Add the vanilla, sugars and oil, beat to incorporate. Add the dry ingredients in three batches, folding in well after each addition, add the carrots, pecans and raisins and fold in thoroughly. Pour the batter into the pan and bake for 40-45 minutes.
Maple Butter Frosting
Cream the butter with half the sugar until soft.Add the syrup, then beat in the
remaining sugar until blended. Spread the frosting over the top of the cake ,cut
into squares.
