Ingredients
- 1/2 cup all purpose flour
- 1/4 tsp salt
- 2 eggs
- 2 tbs white granulated sugar
- 3/4 cup milk
- 1/2 tsp vanilla extract
- 1 pound fresh sweet cherries,pitted
- 1 tbs unsalted butter
- 2 tbs extra sugar to make syrup
Directions
Preheat oven to 425 degrees F and place the rack in the center
of the oven. Wash the cherries ,remove stems and pits. For the
clafoutis batter place all the ingredients except butter and cherries in
the blender and blend for about 1 minute. Once the batter is completely
smooth,keep it aside and prepare the fruit mixture.
In a large 9 inch heavy nonstick oven proof skillet melt the butter over
medium heat making sure melted butter coats the sides and bottom of the pan.
When the butter is bubbling add the cherries and cook until the cherries are
soft and coated with butter. Then sprinkle the cherries with 2 tbs of sugar and
cook until the sugar has dissolved and turns into a syrup. Pour the batter over
the cherries and bake for about 20 minutes or until the clafoutis is puffed and
golden brown around the edges. Sprinkle with powdered sugar and serve
immediately with whipped cream.
