Heat oil in a pan. Splutter mustard seeds followed by cumin seeds, curry leaves, grated ginger and green chillies. Add onions, and saute till they become translucent. Now add grated beets, cumin powder, turmeric and cook covered till the beets are fully cooked. Remove from flame and keep aside to cool. To this add beaten yogurt and mix well, adjust salt. Serve with rice.
Beetroot pachadi looks very catchy.

This looks so intriguing! I've rarely had beetroot dishes (except for German 'borscht' soup) but the vibrancy of this dish caught my attention. I'd love to try this!
